I bought a food journal to record everything in but it has like an opening introduction from the author and she has said to minus the amount of fibre from the total carbs of your meal when carb counting, does anyone do this? My nurse has never mentioned this and just wondered if it is a thing?

I'm guessing your food journal is from America.
Over there, they include fiber in the total carbs whereas, in the UK, food labels exclude fibre from the total carbs.
So, provided you are not buying food from the US, you do not need to subtract the fibre.
Technically, fibre is carbohydrate so, from a chemistry perspective, the Americans are more accurate. But because we do not digest it, so, from a British perspective, it is easier to just ignore.
