As a Curryholic myself I find that I can still make all the curries I used too - I just now only eat miniscule portions. No Naan, chapati or stuff. No, or very little Rice.
My Bg doesn't seem to climb at all. You will only know by testing yourself before meal, 1 and 2 hrs afterwards and see the results for you. It's just trial and error.
What I find is really healthy and has minimal effect on Bg is Tandoori stuff with salad - make nearly all my own, unless out for night. Tastes great.
Try it and see.
