I have just downloaded the free Back to School cookbook from the newsletter I received today and there are some interesting recipes there especially making lasagne with strips of courgette!! Anyhow I was looking at the cake recipes as I have been experimenting with coconut flour and many of them sound great except they use honey. I wouldn't dream of using honey to sweeten being a low carb/ low GI + exercise controlled Type 2 diabetic.

Surely honey in recipes would be for diabetics on medication? Some recipes used Algave nectar and I don't think that is so good either.

Am I correct in my assumption?
 
Some people can tolerate it, it is actually quite hard to digest so slow releasing, which incidentally is why meads take much longer to ferment out than other wines or beers :-)
 
Really? Sounds like I need to test? I wonder how much to try and when to test?
