I have been vegetarian for 40 years. I have had to cut right back on carbs recently to keep the blood sugar under control, so no sugar, normal pasta, potatoes, rice, bread etc. This has been OK, with a couple of substitutes like quinoa for rice, bean or lentil pasta for wheat pasta etc. and easy to eat lots of veg or salad to fill up. The issue I have been having is how to get enough calories. An adult man is supposed to have around 2500 calories a day, I can't see how I could reach that on this diet. The typical low carb diet has a lot of meat in it. I have quite a lot of nuts to boost it up but I find too much delays the blood sugar rise and takes a lot longer to come back down (presumably due to the fat rather than carb content). How do you get enough calories to avoid losing weight if you don't need to lose any?
