How do you work out what amount of carbs to start on?

I am vegetarian for religious reasons and it seems that my lacto veg diet of no meat, fish,eggs means being very low carb will be a little harder than for those who eat eggs etc. I just hope I won't feel too hungry! I'm going to give the vegan leto diet a go after I finish the 3 months on the vlcd .
Although alot on here are omnivores / carnivores, some are Vegetarian and some Vegan.

It is mainly important to get good sources of fat, perhaps coconuts and nuts like walnuts and adequate protein; not just by numbers but if possible proof of absorption. I'm one for letting my meter, blood tests, physical and mental well being point to health choices. I believe @WuTwo would be worth you following for some pointers, and there is a vegetarian section within the forum area.

Thanks for your reply. I read @Wu Two 's posts and have started noting down recipes from them. I have learned a lot from what she writes.
