I'm just about to make liver and bacon casserole. I used to thicken it by dipping the liver in flour with herbs and salt and pepper before cooking.
How do I thicken it without using flour or cornflour please?

Xanthum gum, mix it thoroughly with water a little at a time then add it. Its usually best to make up the thickening gel before you start cooking as its a bit difficult to mix and it benefits from standing and remixing periodically - it does not need heat for this. You will be amazed at how little you need, half a teaspoon will be adequate for a very large casserole.

Hi and thanks for your replies. I have calculated that if I use gravy granules i would be adding about 12g of carbs if I have worked it out correctly. So maybe I shouldn't worry about it.
I will look out for Xanthan gum though. Where do you get it from please?

Xanthan gum can be bought in supermarkets in the freefrom aisle ..... Dove
Another alternative is instant mash potatoe as that is a good thickener

It's much less than that Cally, made up (depending on thickness and serving size) gravy granules average around 3-4g of carbs per 100ml serving.

I got mine from a health food shop, but supermarkets are starting to stock it now. Its effectively zero carb.

A turnip, boiled to death, mashed and mixed into the casserole.

I use a table spoon of seasoned flour in a sandwich bag to coat meat for casseroles etc. I cook 4 potions, a tablespoon of white flour has6g of carb so for 4 portions it's 1.5g per portion, even on a low carb diet that seems acceptable

That seems a reasonable amount really and most of the time I do something similar by mixing about a tablespoon of flour with butter to make a roux for thickening. There are times though when I like to keep to 20g carbs for a couple of days though and its then that I'll use xantham gum as every gram counts.
