I thought fish pie was low carb, but.....

So, home made fish pie for tea tonight. Thought that would be really low carb, and therefore keep my blood sugar down, but whoa, 10.4 after 1 hour, no wonder I was feeling grumpy. Can't figure out what caused it to spike though, so suggestions welcome. I made the sauce with semi skimmed milk and a little cornflour to thicken it, I also added some garden peas, and the topping was swede mashed with single cream.
Any ideas anyone?

I'd have used cream cheese mixed with grated cheese for the cheessey sauce. Milk has carbs, the lower fat the more carbs and cornflour has carbs 20.9g per 25g.
 
Peas and swede aren't known to be that low carb to be honest, although they work for some people.

Humalogmix25 twice a day, Methotrexate 25mg once per week, FolicAcid 5mg once per week, prednisolone 5mg daily, Allopurinol 300mg, Calcichew-D3 800iu, Levothyroxine 50mcg, Atenolol 50mg, Losarten 100mg, Aspirin 75mg, Nicorandil 20mg, Nitrolingual GTN spray, Metformin 2000mg, Allimemazine 10mg, Lanzoprazole 30mg, Atorvastatin 20mg, Co Codamol 8/500mg, Depo Medrone (Methylprednisolone) or double Prednisolone for 7 days in case of RA flare.
 
I use cauli mash for the topping and melted philli with parsley for the sauce. Mashed cauli works well with shepherds pie too.
 
Wot they said, re the carbs. I ended up throwing out all my thickening flours and now boil to reduce the gravies instead, or use cream.

My fish pie recipe is a combination on gluttony and laziness - and v low carb:

Get a 2 inch deep pie dish.
Tip in one of those mixed packs of fish (some salmon, some smoked haddock, some white fish).
Stir in your veg of choice (I use diced pepper and sliced courgette, because I dislike over cooked peas!)
Grind black pepper over it.
Dot on blobs of cream cheese - or spoon on a bit of double cream.
Scatter grated cheese (cheddar or Red Leicester) across the top.
Sprinkle Parmesan lightly across that.
Bake at 180 or 200 degrees until cheese is golden brown - the parmesan adds crunch
Check it is cooked by excavating a chunk of fish and if it flakes easily, it's done.

The deeper you make the pie, the slower it will cook.
Obviously, you can adjust fish, veg, cheese and cream according to your personal dietry requirements...
 
I do have a problem with a lot of the food mentioned on these forums. I absolutely detest cheese in any form, also nuts. Both make me physically heave if I have some in my mouth.

:wideyed: But how do you survive the winter? I thought peanuts were the staple of every bird feeder!
 
I guess it might have been the cornflour, I was hoping a smallish quantity might be OK, but I am discovering that most flours are not good for me (except surprisingly the hot cross bun I had as an easter treat!).
I have been cauliflowering with lots of stuff, but was getting a bit bored and hence the swede.
Did try quionoa and bulgar wheat mix last week and that seemed surprisingly good.
Bluetit - I understand where you are coming from. Luckily I like cheese, but I hate nuts, and I am having to ween myself on to them slowly as they are such a handy diabetic snack. So far cashews are the least gruesome!
 
SueKen, when you had your hot cross bun, did you eat it on its own, or with other food? The other food can sometimes slow down the peak enough that 'you can get away with it'. ;)

I also add vast amounts of butter. I kid myself that the butter will also slow things down, but really, it is just greed. I only allow myself one hot cross bun a year (with orange and cranberry), so I think the greed is an acceptable blip.
 
Yup the hot cross bun came with liberal quantities of butter in the hope that food combining would work. I did however scour all the hot cross buns available in Tesco to make sure I had chosen the ones with the lowest total carbs.
And I had it the same day as 3 roast potatoes with my roast dinner (boy did I feel like a complete rebel that day ;))
