Hello all.
I'm after some ideas please.
I work 12-hour shifts and have 2 x 30mins breaks during those shifts.
Due to the nature of my work, the meal breaks are closely monitored hence we don't have much time to prepare a meal at work so I have to take packed lunches.
I'm Type 2 diabetic and would love to hear any suggestions you may have for interesting and healthy packed lunches as I'm running out of ideas.
I realise this may sound like a strange request but needs must!!
Regards to all,
John

Hi John, I was diagnosed in October this year with type 2 and started a low carb diet. Hubby, who is not diabetic, started this diet with me and he takes a vegetable stir fry into work. He does a physically demanding job and finds this satisfies him, along with a piece of cheese for his other break. Hope this is of some help to you.

Soup in a thermos with some cheese and crackers ( if you can tolerate them ).
Big box of salad ( this is what I live on for lunch :) )
Tapas in a box ( this is the other thing I have when bored of salad, which basically means everything I can eat out of the fridge-meat, cheese, pickles, tomatoes, cold sasuages )
Spanish omelette or tortilla - you can eat these cold and they taste a bit like quiche without the pastry depending on what you put in them.

I used to make an omelette the night before and stick it in some tuppaware. Whack it in the microwave for 2 mins and you're done...

Thanks to all for the ideas so far.

Not sure whether my bosses will appreciate the Guiness and Glenfiddich suggestion so I'll leave that one for home but the rest are achievable so thanks again to all.

Regards,

John
