Hello Meels19 .
I felt mad and furious too when was diagnosed Dec30th 2009 .
Ruined my new year too!
After battling 'off' both pneumonia then septis was hit with the
ruddy diabetes diagnosis .
So fully understand how you must have felt .
Jacks reply has had me in stitches with his - Who can we give it to ?
We also smile and laugh thro the heartache and tears of it all here .
With regards to the lettuce leaf comment you made .
Try this one I use and DO often .
Lettuce Parcels !
Clean some largish lettuce leaves .
Choose all your favourite salady things .
Cheese ,ham, chicken, boiled eggs, grated carrot , tomatoes, celery,
cucumber slices, diced onion, even spring onions too, peppers,
radishes,beetroot etc etc - plus any really favourite relish or salady dressing .
(light drizzle of it optional/own choice kind of thing)
Plonk whatever you fancy into a lettuce leaf - roll them up .
Place on smallish plate (this makes them look a lot more on a plate trick)
Munch away on them and enjoy a new world of living on a lettuce leaf !
They can suprise you as they're really tasty and do fill you up too .

So sorry it ruined your New Year back in 2009 - seems as though lots of us 'go' through stuff - thank you for the parcels recipe I will try those for a treat now and again. I manage double egg on toast for dinner along with a tuna salad for tea follow by a few grapes and strawberries - I really enjoyed it and when I've been to the doctors (for another painful back and shoulder issue) I will start to make banana muffins and the chocolate cake from another member earlier. thank you for the warm welcome Kind regards Meels
