Anyway they have looked on how bread and wheat based products are made and the preservatives and addictives that are put in the fresh bread. Basically what they have found is that the method of breadmaking and how the flour is made changed heavily form the '60 to today. They made an interview with a MD that supposed that the refined gluten-rich bread that is made since the '80 is linked to the gluten intolerance explosion.
I linked the dots and I've immediately connected it to the obesity rise after the '80.
I'm thinking about to buy a bread making machine and buy wheat from the mill...
