I forgot to state I also cut out potato too.
I eat a lot of eggs for breakfast - with bacon & veggies (onion pepper etc)
I've tried doing things like using cauliflower as a rice substitute, or as a pizza base, but I don't bother anymore. Just a protein and plenty of veggies. I also suffer from IBS so can't eat beans or brassicas without consequence, so I eat a lot of leeks, asparagus, mushrooms, peppers, onions, sweetcorn with my protein.
I've also tried all the different pulses, Quinoa etc, but it just doesn't do it for me. Each to their own though. One thing I can't seem to let go is a good nan bread with a curry and I sometimes treat myself.
I used to love nothing more than a lasagne or a curry with rice, but I have to admit I don't miss them anymore - especially when the weight started to drop off.
