Keto diet

Probably. Erythritol and stevia are very sweet.

And it will last me ages compared to the vanilla so im saving money in the libg run. In a pancake recipe i want to try thats keto it asks for keto syrup sweetner could i just use the powdered sweetners like stevia as no were i live sells any keto syrups.

Have you tried making chocolate mousse? Whip some cream (with or without a stevia/erythritol mix for sweetness), mix with melted extra dark chocolate, OR unsweetened cocoa powder, and you have an excellent, chocolaty dessert.

But do you have to use an electric whisk as i can use them or food processor's or blenders due to my tinnitus as it rings a little louder after using loud kitchen tools.

Hand whisking's fine, just takes a little longer. And I don't know about the liquid sweetener, never used it... I did notice I liked very fine sweetener better than the ones with slightly bigger granules, as it mixed better. And you'll have to adjust the amount most likely. https://www.sugarfreemom.com/wp-content/uploads/2014/05/stevia-chart2.jpg
