Lemon Almond Shortbread Cookies

    Just made these with Almond flour and I am very pleased with them :-D

    Is almond flour just finer than ground almonds and what fat do you use?xx

    I used Willow butter which had to be melted first, then the other ingredients added to it, also first time I have made these.

    I used Morrison's ground Almonds, from the baking aisle.

    Yes I used Slimmer low calorie Sweetener ( 100g bag) which I have had in my cupboard for over a year now :rolleyes:

    The first time I made them I didn’t think they were lemony enough, so subsequent batches I’ve a tsp of lemon extract :hungry:
