Elsewhere I belong to a couple of "historic cookery" groups and this appeared the other day. Not made it yet but it a) looks good and b) seems very low carb.
Oh I made it years and years ago, not from this recipe, remember a guy called Robert Carrier? TV chef big in the 80s, one of his recipe books, it was absolutely rotten! It’s etched on my memory over 30 years later so not taken a chance in this one. I’ll leave that up to you @KennyA
Last night made something similar, except I used 2 sticks of celery, 8 large mushrooms, 4 asparagus spears, and 2 heaped tablespoons of cauli rice. Simmered in homemade chicken stock, then blitzed with a blender, returned to the pan and heated with 2 heaped tablespoons of thick double cream to thicken.... lovely! Much more appetising than lettuce IMO and hardly much more carbs.
I have made cauliflower rice pudding and loved it. Just used cream, unsweetened almond milk and simmered it down added a dash of vanilla essence (if needed) and the jobs done. Have had this as my comfort food whilst being poorly and it perks me up a treat.
