That sounds a good idea searley! I've never been a big bread eater, but do like the occasional salad sandwich, or a slice of cheese on toast. I got some of those Benecol cholesterol lowering drinks in at the same time, and used to love them. However they are now proving to be far too sweet! My daughter likes them so they won't be wastedMy personal thoughts are that there is alsorts that you could have occasionally, so long as you don't overdo it, or allow it to be come more habit than occasional treat..
in the long term so long as you are keeping an eye on you BG, and its not having a negative impact on your HBA1C then the occasional treat should be fine..
when i though i was T2 i would pre plan a treat that i was going to have... and i could only have it so long as i was good for the week/month or whatever period i had chosen in the lead up to that teat..

Yes these low carb diets are ultimately very beneficial to control BG's for which one should definately keep monitoring it (using a CGM like Blucon which easily goes with FSL )and your weight...but doesnt it become monotonous following same diet for long
