We used to keep the backbones and wings when we filleted fish, they are great cooked up crispy on a barbeque. The pinbones are the mongrels people swallow, you check for them and cut them out before cooking.With regards to pull out the spine & mindful of any left behind

Regarding kippers. I've personally never had issue with the bones. Finding them easily digestible if consumed.
