May I suggest a look at the work of Dr Aseem Maholtra, who is an eminent UK heart specialist. He is an advocate of an LC diet called the Pioppi diet which is similar to LCHF, but not keto, so does not require the High Fat intake, This is the diet I am using, and it is a cross between the Mediterranean Diet and LCHF,
I too have a blocked cartoid artery (and only half a brain as a result) and also had a mild heart attack event after my strokes, so I was worried about high fat diets too. I personally use medium fat, and an LC level just above that required for ketosis, but I also use intermittent fasting to do the fat burning by short excursions into keto mode,
I am happy with the new research that demonstrates that using saturated fat is not the evil it used to be looked upon, and I am encouraged that my cholesterol levels improved when I was doing full LCHF last year. My weight and waistline have also reduced significantly, and I have had some regeneration of beta cells and my insulin response has improved too, My oral meds have been reduced by 75% and my bgl control is good and stable
