Last year I was brand new to low carb eating, and was sad because couldn't figure out how to have any of my traditional Chanuka/Hanukkah foods. But since then I've figured how to make low carb latkes, and I thought I'd share in case anyone else is in my (former) boat.
The answer is basically zucchini/courgette, of course!
Not sure how it took me so long to figure this out, as I'd been eating courgetti for a while already, but I eventually discovered that if I shred courgette with some onion and garlic, and use only egg as a binder, it's pretty low carb and makes a decent latke! I have also added in yellow squash and a bit of carrot at times, especially when I'm having trouble finding enough courgette at the market. Anyway, it's lovely fried up like a latke, and fills my desire for the "traditional" food--yay!
