Low Carb Recipes

Hi I'm new here. My 10 yr old daughter was diagnosed with diabetes type 1 in May this year. Massive shock but we are trying our hardest to cope on a day to day basis. The hardest thing I find is that at school they hold cake bakes open days quite a lot and I absolutely struggle when Honour wants to buy cakes/cookies etc like everybody else and I've no idea how to calculate what's in each one. So does anyone know of a good site or app where I can get low carb recipes for all types of food but especially 'sweet' recipes. Thank you
 
A quick google search for "low carb recipes" will get you thousands of low carb recipe sites. Most low carb baking uses almond or coconut flour which is very low carb. I personally don't like coconut flour as it is very dry but almond flour is quite tasty. Both are expensive. One good site you can look for is called "I breathe, I'm hungry" it is done by a person who follows low carb. She has a lot of sweets and baking but also ideas for meals. Not everyones idea of low carb is the same but any good site should have the nutritional info with the recipe. Good luck.
 
I tried @ewelina 's peanut butter cookies at the weekend and they were seriously delicious. Well the adults thought so. The kids were less impressed - that's almost certainly my baking or my nephew is just too fussy!

If your daughter wants to be like everyone else, but you are struggling to work out carb content of home baked cookies / fairy cakes etc you could try entering a bog standard recipie into my fitness pal and it will give you a good starting point for how many grams of carbs to expect in an average slice of Victoria sandwich (or whatever it is you daughter would usually go for at a bake sale). You could even make enquirers with the bakers as to what recipie they are using and import that recipie from the internets to myfitnesspal - then you would have carb content to bolus for.
 
Hello :) You can use any recipe and replace sugar with xylitol/erythritol. For flour you can use either half ground almond and half normal flour or mix of coconut/almonds/soya flours for really low carb cakes (but with low carb flours you need a bit of experience, not every recipe will work).
