Salt to taste and add carrots. Stir and add chilli and lemon juice.. Put lid on pan and allow to steam in lemon juice. Add teaspoon of Splenda and chopped coriander and enjoy.

Baked one last Saturday and it was gorgeous fresh from the oven. We stored the rest in the fridge and, when chilled, it was like fudge!
