I just rinse under the tap in a sieve. The smell comes from the water in which the rice / pasta is stored and is not difficult to get rid of. I bulk bought lots of Slim pasta and rice a few weeks ago and it is definitely labelled on the front of the packets as zero carb. As for the comparison with cauliflower rice, I'd prefer that, but it adds too many carbs for me. And of course the ricing causes the cauliflower to be digested more quickly than if it were in chunks. I did try the Zero brand noodles before I discovered the Slim brand. They have a much odder texture, I imagine because the Slim recipe adds some oat fibre to the konjac flour. Incidentally, oat fibre as opposed to oat bran is zero carb and I have wondered about using it for baking, but was put off by the cost of ordering from Amazon.
I can still smell and taste the fishiness of the noodles if I don't add lemon. I suffer Fibromyalgia which heightens the taste buds so I rinse for 3 to 4 mins, pour boiling water over them in the sieve and add lemon juice and swish it around. Wonder if Holland and Barretts sell the Oat fibre? Maybe cheaper. Yes, Amazon can charge the earth and for delivery.

Maybe I am lucky not to have such sensitive taste buds! I don't think Oat fibre is available except online, definitely not from H&B. Beware! - oat bran, which is quite widely available, is not the same thing and does contain carbs - 66g per 100g!!! Even oat fibre is not always sold as carb free. Disappointingly, the only brand of oat fibre I can find on sale at present in the UK claims to have 3g carb per teaspoon, which would make it pretty high carb. Can this be correct?

I read in a few blogs that if you pan-dry the noodles slightly after cooking/rinsing, that the texture is better, less slimy, and more suitable for something like spaghetti.

I find the konjac root noodles to be too thin and slimy, but love the spaghetti - just the right thickness to give a more pasta-like feel. But the taste? No. I just make sure I coat them in my lovely homemade marinara sauce, with plenty of bacon or sardines - my faves. And masses of parmessan cheese sprinkled on top. That does the trick. (Sometimes I just can't be bothered spiralising the zuchinni...)
