Type 2 Low carb

The one meal I find easiest to skip is the evening meal, not breakfast. Breakfast and lunch keep my mind functioning during a day of work, then I find it okay to substitute the evening meal for a walk and go to bed early. I'm not sure why breakfast is the 'normally suggested' meal to skip, perhaps it's because a lot of people find it's easiest - e.g. my sister isn't interested in fasting, but she "can't eat" first thing in the morning so she sort of accidentally fasts most mornings. For me however not only do I need breakfast to function at my job, but I think, based on very limited number of observations, that getting the eating out of the way earlier in the day results in lower blood sugar.
 
For me breakfast was always my favourite meal of the day. Two Shredded Wheat and cold milk, yum! However, due to dawn phenomenon and seeing the horrendous spike on my Libre, I moved on to raspberries and Greek yoghurt. 10 carbs worth. It’s not the same but better than nothing.
The irony is I still need 4-5 units to deal with that wretched dawn do da! I often fast the other end of the day. Just had main meal at 3ish and won’t eat again TIL brekkie. Find I am stable from about 6pm TIL the rocket starts at 4am the following morning.
 
This reminds me of the argument that was raised in the 70s about feeding newborns 'On Demand'. The old guard would stick by their mantra of feeding by the clock and advocated leaving a baby to cry until the clock said it was okay to feed it. My clock tells me it is breakfast time but my body says I'm not hungry so I ignore the clock. I eat when I can face it and now call breakfast my first meal because I do not have it soon after waking and would choose not to have it at all if I didn't have to take food dependant meds. I would quite happily eat in a 3-4 hour window once per day.

You could try a mug “bread” . 25 gm of almond flour (coconut flour is an alternative but as you do not like coconut may not for you) , a bit of olive oil, half a teaspoon of baking powder, one egg , a bit of salt if you like salt , mix put in a mug , microwave for 90 seconds . Turn out of the mug ( sometimes needs a shake ) and eat hot with a bit of butter.

Yes, I can skip dinner but can't miss breakfast

I only ever eat when I'm hungry so my mealtimes can very quite a bit. Sometimes breakfast become brunch and other times hunger gets me up in the morning
 
I don’t eat before noon and just drink tulsi tea instead. After over 60 years of having 3 meals a day and then finding that I was diabetic I needed to make some changes. My decision was to cut out carbs, exercise in a fasting state and fast until lunch time.
I did not take long to get used to it. When the chimp in your head complains, just put it back in its box.

When I was 15 I went on a French Exchange to Toulouse and was astonished to be offered a hot chocolate at breakfast.
I thought this was the best thing since... since... ANYTHING!!!!

I came home and announced to my mother that chocolate at breakfast was not only sophisticated and French, but I was going to have it too. In a bowl. With whole milk.

You can imagine how that went, can't you?

Well, even now, on an extremely low carb way of eating, I still prioritise decadence and hedonistic pleasure over boring routine ;)

So yes, I can (and occasionally do) have low carb hot choc for breakfast. In a bowl.
It is delicious.
Boil kettle
add a heaped teasp of pure cooca powder to empty mug
add sweetener (I use erythritol, 1xteasp)
add double cream and stir to make a smooth paste
add boiling water and stir til smooth
enjoy

Other breakfast options include
nothing
a coffee with cream
and sometimes cooked English Breakfast type stuff or leftovers from the night before
