I have found the lead up to Easter difficult at work this last week with people handing out chocolate eggs and Easter cakes, not everyone knowing I’m diabetic However today at home with the family has been lovely. Hubby chose my Easter egg wisely, it’ll last me a while! Roast dinner was easy as I know what I can tolerate from previous testing. Then I made ‘lazy’ chocolate mousse popular on the Low Carb What have you Eaten Today thread, for pud. Tea at the ILs was cold meats, cheese and salad buffet
. Hardest part was organising an easter egg hunt for kids grandchildren nieces and various great grand siblings. Watching them stuff themselves with chocolate nearly broke my resolve! Especially watching one of the kids (30+) eat the ears off a large lindt bunny! Next year i will take them all out to breakfast
