It's very easy for even low carb food to add up in a day, and there can often be carbs in something that aren't obvious, eg bought sliced cheese or meat. It could be that your body can't cope with the amount of carbs you're having.
Are you using a blood monitor or a cgm to monitor your levels? If you gave a typical days meals, and also what your last hba1c was, it would help others on the forum to help you.
