I made this yesterday (it was mentioned on @CherryAA other thread) and it is absolutely gorgeous but, yes, it is very much more like moussaka than lasagne. I suppose you could get some of the konjac lasagne sheets and layer it up or use unrolled leek layers in place of pasta.
I scattered a LOT of cheese on the top before baking. Yum!

Not ussed about trying oats, the veggie versions are good enough for me - but whatever floats your boat if it works!
Sainsburys sell pre sliced butternut squash which is a really nice alternative to pasta sheets. (I don't like to cheat, but found it really hard to slice the squash thinly enough myself!)
