Sounds nice but I am confused what makes this lasagne as it has no pasta or pasta replacements.
The topping sounds like a mousaka topping.

I actually make my own lasagne pasta at home from oatflakes flour or other kinds, its max 10gr carbs/serving and tastes delicious. :))

I made this yesterday (it was mentioned on @CherryAA other thread) and it is absolutely gorgeous but, yes, it is very much more like moussaka than lasagne. I suppose you could get some of the konjac lasagne sheets and layer it up or use unrolled leek layers in place of pasta.

I scattered a LOT of cheese on the top before baking. Yum!

I've tried this with various different layers

rolled out leeks, sliced courgettes, aubergines ,
I'm also looking into konjac pasta,
Not ussed about trying oats, the veggie versions are good enough for me - but whatever floats your boat if it works!

Sainsburys sell pre sliced butternut squash which is a really nice alternative to pasta sheets. (I don't like to cheat, but found it really hard to slice the squash thinly enough myself!)

I make ‘lasagne’ with butternut squash too! It really is tasty, but as you say difficult to slice it thinly!

This look very nice. I made a moussaka/lasagne a couple of days ago with layered spiced mince/veg but yours looks better. Thanks.

My food processor can handle thinly slicing butternut squash, and has quite a wide feeder tube.

A mandolin would do it, but they're so dangerous (in my view) that I won't have one in the house. I can't even watch someone else use one. [ shudder ]
