meal for one

Another thing I do is to batch cook. For example I don't make just one omelette, I keep going until either I run out of eggs or mushrooms or whatever. Freezer bag for each one and possibly a container and into the freezer. Makes the basis of a nice cooked breakfast. Just microwave and add whatever else you have that needs eating. This morning it was mushroom omelette and two high meat content sausages. Whole packs of these sausages also pre-cooked and into a container in the freezer.

It's a hard life.

Whilst I batch cook a lot, I can confidently say I have never, ever frozen an omelette. I would have guess it not to be fluffy when defrosted, but I will actually try this soon.

@greener - sometimes planning is good. I plan a week worth of meals at any given time. I don't decide I will have steak on Monday, pork chop on Tuesday and so on, but I do decide I will have steak, pork chops, chicken breast (whatever really) this week and work my way through my shopping. Of course, there are the odd times when on the 7th day (or however many I have shopped for)I don't fancy what's left, but I usually find getting on and eating it more palatable then going shopping and throwing perfectly good food away.

@greener cannot be the only person not able to cook or inclination to.
I'm not a great cook but I give it a go. For my kids sake and our longevity.
My advice is start with a fried egg. Then omelette without bits then with bits.
Grilled bacon. Cook all then freeze or fridge remaining 4 slices. Sausages too.
Buy m&s courgetti and mix supermarket fresh pasta sauce or cupasoup but watch for salt content.
You can get the microwave to defrost without it cooking ends. Practice makes perfect.
Maybe your microwave is old or too strong on defrost button. Defrost for a few minutes at a time to catch any colour change.

We have had a few posters on here making offers of ready meals. Unfortunately they usually call them "Diabetic Meals" and when they are asked for details they go tongue tied. One talked of selling them from a market stall and thought we were too posh to do that. I pointed out that we would not buy them from Harrods either and he finally took the point. The thing that interests me is what they imagine Diabetic Meals are when they make their plans. With my luck it will be Nanny Mcphee and the Eatwell Plate and sold in Tesco.

Did I say it was fluffy to begin with? They defrost and give off a little water so a dry plate should be used to transfer them to. They are then much as they were when they went into the freezer. I have standardised on a 3 egg omelette and I use a non stick wok (lately a ceramic coated one) since the round shape and the exact depth makes the process easier.
 
I never know what I want either until an hour before. I do know that I don't want to cook all the time even though I will admit to being a good cook I keep everything simple now. I cook in bulk. At all times I have a few different kinds of salmon, chicken, turkey, lamb, beef, hot dogs, deli turkey, turkey meatballs, shrimp. Lots of those I have some portions of raw and some cooked for salads or to mix with mayo. I put them in chunks in serving size baggies. If I want it hot all I have to do is sauté it.
An hour before I want to eat or sometimes in the morning I take out whatever I'm in the mood for and defrost in a bowl of cold water. Takes less than a half hour. Then all I need to do is choose my veggie.
Nothing to cooking these proteins. Turn the oven on and cook until done. I I will season to taste and mood the day I eat it.

I have made baked eggs in a muffin pan and they are good reheated. Not as good as fresh but good. I try to have it defrosted 1st and then heat just until warm or they get rubbery. Meats, cheeses and veggies added to taste. I have never frozen an omelet, hmmm. They're too easy to make fresh and very little clean up. I would maybe make one the night before and refrigerate it I was pressed for time in the morning. Actually I love omelet for dinner.
 
Greener thought you didn't cook? Have you found your local M&S yet?

I did find it but it has limited selection, only 4-5 meals
And some have carbs like rice
And most aren't that fatty for keto
So I will have to cook myself fatty sauces based on mayo and thick cream to increase my fat intake
Also I will have to make deserts based on thick cream
I will then plan to accompany my fatty sauces with grilled meat, steak, belly, chicken, fish
I will do that for 2 weeks, hopefully getting into keto
Then I will try to maintain my keto introducing some carbs, hope it will work

I think it was the mushrooms which started off the freezing approach. The eggs will keep until needed but my favourite omelette is mushroom and they don't keep for long so I buy the biggest box at Tesco and a couple of dozen eggs and get the production line going. The clean up is not a problem since the dishwasher has never complained but I like the idea of only getting the pan and wok out just once.

I think I will have omelette and ham for breakfast. There are three joints various in the oven right now slow cooking. It's a hard life.
 
the problem is that I cannot know what appetite I will have next day! I usually decide a couple of hours before the meal!
Write up a menu list with corresponding numbers for each one..
Do this menu list 3 times, on separate sheets depending in "gradient" corresponding (portion wise) on how much an appetite you have..?

Depending on how hungry you are, pick a menu sheet.

.... Then take one of those multi sided "Dungions & Dragon" dice then give it a roll.
The number decides your meal's fate!

Eat hearty my friend for the kitchen is fraught with danger... :D

Yes mushrooms are a problem but I have sauted them all in garlic oil and then froze them in ziplock bags and I can just break off what I want. I LOVE mushroom and asparagus omelette. I love maitake mushrooms but will often make a mixture and freeze. I am the freezer queen. Haha
 
Try the 'Look What I've Found' range meals for one. All fully sourced meat and some of them are only 7/8 carbs per portion. I can get them in Tesco or better buy from their website online. I have found the Chicken Korma on cauliflower rice a wonderful lifesaver after a long and heavy day. Also the Natural Low Carb store do low carb meals, expensive but again, a life saver when cooking from scratch is too much after work. Hope that helps - no shares in any of the above !!

@greener - have you heard of Miracle Thaw Defrosting Trays? You can defrost food in a fraction of the time, so you don't need to plan your meal hours in advance. I use mine all the time for salmon and prawns. You can buy them on Amazon and they're not expensive. Hope this helps.

Most Tesco and Sainsbury have s butcher on site. We buy exactly what we want, little or more and so avoid waste and it's no more expensive.
