I used to like the breadcrumb content - stale, then toasted - and the low-carb bread doesn't work that way. Pork scratchings crushed are a decent substitute.
I remember that back in the day I was impressed by how often meatloaf (the dish!) was mentioned and tabletop-featured in the sitcom 'Roseanne'. So much I decided to make it for my family who I was feeding at the time.
I cooked it once, and never again . I'm sure it is nutritious, but for me - it looks ghastly and I am adverse to the texture...
I'm more a swedish meatballs kinda gal .
I used to be a fan of ikea meatballs. Then I found out what they did to my glucose levels :-(
I use a wonderful LCHF recipe for Swedish meatballs - I didn't note the source - but highly likely to be the Swedish based dietdoctor.com.
It of course ditches the otherwise delish lingonberry jam serving and the gravy accompanying traditional Swedish (yes - ikea of course yes) meatballs. And swaps it with a cream and cream cheese sauce. Lingonberries on their own (ie no sugar added!) are like other berries - low carb in low quantities. Allspice and black pepper are the key flavours in the meat.
I also find baking meatballs to be better than frying them.

Are you fine with dairy products, @OrsonKartt ? That is one of the key ingredients of Swedish LCHF recipes, I believe. Cream cheese, and cream. LOTS of cream, for the LCHF meatballs.
I don't make these so often, as it takes so much fluffing around, even though love to eat them, and they travel well, cold. (Handy easy to eat portions.) Will try to remember to photo and send in here next time I do...
