That's exactly how I do it. Only tried this sites way as previous attempts have failedThe trick is to whisk the egg whites first until they form peaks then add the sugar or xylitol in your case, 1 tablespoon at a time whilst still whisking. Add the vanilla extract last

Oh dearIts a bit impossible Im afraid with alternative sugar, it just doesnt work. I will tag @ewelina as she may be the best person to help you out but I tjink even she has trouble.
ive tried many times and im afraid low carb meringue doesn't existSugar carmalizes, giving that nice crunch on outside. Unfortunately sweeteners ( including xylitol or erythrtol) dont work the same way. You can make nice, soft sponge but it is not meringue

Thanks Ewelina. Love your blog & nice to have recipes that don't have unusual ingredients. That's an idea. Mixing sugar with sweetener. May give that a go,Agree with those who say it won't work - to be honest if I want meringue a nest is about 12g carbs so I have half of one now and again and doesn't do anything drastic to my bs - if on the very very rare occasion I make my own I use a 3/4 sweetener and 1/4 sugar - seems to help and as I make a pavlova for 12 only at Xmas or Easter I also can cope with this.

Thanks Mahila. If they work for you maybe I'll keep tryingI've never done meringues with sweetner, only sugar. My non-diabetic daughter loves meringues so I make them for her.
