Has anyone made successful meringues?
Mine turn out soft and spongy. I use xylitol as it measures same as sugar and have tried whisking into egg whites slowly and also the pavlova recipe on this site melting sweetner and lemon juice and whisking into egg whites and adding corn flour.
Many many failure so any foolproof recipes or tips gratefully received
