Meringue failure!

Has anyone made successful meringues?

Mine turn out soft and spongy. I use xylitol as it measures same as sugar and have tried whisking into egg whites slowly and also the pavlova recipe on this site melting sweetner and lemon juice and whisking into egg whites and adding corn flour.

Many many failure so any foolproof recipes or tips gratefully received

The trick is to whisk the egg whites first until they form peaks then add the sugar or xylitol in your case, 1 tablespoon at a time whilst still whisking. Add the vanilla extract last :)
That's exactly how I do it. Only tried this sites way as previous attempts have failed

ive tried many times and im afraid low carb meringue doesn't exist :( Sugar carmalizes, giving that nice crunch on outside. Unfortunately sweeteners ( including xylitol or erythrtol) dont work the same way. You can make nice, soft sponge but it is not meringue

Agree with those who say it won't work - to be honest if I want meringue a nest is about 12g carbs so I have half of one now and again and doesn't do anything drastic to my bs - if on the very very rare occasion I make my own I use a 3/4 sweetener and 1/4 sugar - seems to help and as I make a pavlova for 12 only at Xmas or Easter I also can cope with this.

Thank you Sally. Yes I'm planning to add some more. Have plenty ideas just not enough time for baking and taking pics. Ive tried al the fancy ingredients people put online but to be honest I find ground almonds the best

That's an idea. Mixing sugar with sweetener. May give that a go,

Have you successfully done this? As below most folk find it really hard to make them work?
 
I use those little ready-made ones that you get in a bucket of about 20 - they're about 4.5g per mini-meringue, 2 or 3 is enough for Eaton Mess.
