Sounds interesting. How long does it last for or do you eat it that quick it's not got time to go off. It stayed nice and white even with that amount of cucumber. Will give it a go and see if it will work with plant yogurt. Thanks. XIt's zaziki, which tastes good with almost anything.
I make a very simple one: A big pot of 10% fat Greek yoghurt, scoop a bit out to make room for the cucumber. A whole grated cucumber (takes up much less room than you'd expect), a couple of garlic cloves, grated, pinch of salt, splash of olive oil.
