It's zaziki, which tastes good with almost anything.
I make a very simple one: A big pot of 10% fat Greek yoghurt, scoop a bit out to make room for the cucumber. A whole grated cucumber (takes up much less room than you'd expect), a couple of garlic cloves, grated, pinch of salt, splash of olive oil.
Sounds interesting. How long does it last for or do you eat it that quick it's not got time to go off. It stayed nice and white even with that amount of cucumber. Will give it a go and see if it will work with plant yogurt. Thanks. X

Not sure how long it keeps, but at least 5 days unless the yoghurt goes off before that time.
I'm sure it'll work very well with plant based yoghurt too, enjoy!

Cold proteins would work as well, but I do like a warm meal once a day.
My issue lies in the proteins, all good and well to reheat a stew, soup, or something tomato and minced meat based (think bolognese) in the microwave, but anything like pork belly strips, crunchy fried bacon, pan fried fish, meatballs etc are out if you have to rely on a microwave. And so are fried eggs, warm boiled eggs, halloumi and the likes, those things need to be cooked on the spot, not microwaved.

A plate of veggies and a protein seems difficult to me, so I'm really looking into tasty hot meals without eating soups and stews all the time.
It's nice to cook eggs with feta spinach dill and oregano (or any filling really just cut up small, add and mix) in microwave. This comes from Freshwell cookbook called a microwave omelette.
