How about a big pot of vegetable curry with your meat of choice added in. I cook any veg from the fridge in olive oil and garlic and add in curry powder and (garam masala) at end) with a tin of coconut milk. I divide into containers, cling wrap and add the sealed lid. I just take one out of fridge then microwave for my dinner. I also make a low carb garlic and cheese flatbread and have instead of cauliflower rice. Yummy. X

I often roast boneless chicken thights for about 10-15 minutes then add whatever is in the fridge (peppers, mushrooms, red onion, baby tomatoes, chorizo, broccoli)
Roast until all cooked & take to work in a soup mug & heat it up in the microwave

Are you going to be having two meals a day at work, @Antje77?
I guess at least one will need to be hot? Though the weather may necessitate two hot meals?
When I was without a kitchen during house renovations I perfected scrambled eggs in a microwave. (@JoKalsbeek , this one for you, https://www.allrecipes.com/recipe/272293/fluffy-microwave-scrambled-eggs/

To vary the eggs meal I would sometimes add such things as chopped mushrooms, chorizo, bacon , cheese, bell peppers, sausage, onion.

On days off get organised and batch cook soups, curries, stews. You can reheat in microwave or carry in a food thermos.

I hope you are enjoying your work. Looks like a lovely workplace.

Oh and if you like dessert, mug Cake. I‘ve used almond flour, 1tablespoon, butter 1tablespoon, 1egg, 2teaspoons of sugar substitute, 1teaspoon of baking pwder, and melted 2squares of chocolate whisked with a fork in the mug. Then microwaved for a minute or so. (It is never an exact science when I am creating a meal )
This is an example of how it should be done if you follow a recipe.

I've never in my life eaten two hot meals a day, except when sailing with Germans who often have a soup at lunch, weather permitting.
Your eggs sound perfect for days where I failed to batch cook before working days!
My schedule is very forgiving in case of lack of planning: one week I work on mo, tue, sat, sun, the next on wed, thu and fr, so never more than 3 days before having at least two days off. So if things go wrong I can live on cold foods for a maximum of 3 days perfectly well. :)

Very quiet right now, sometimes there's an hour between ships so I'm reading more than ever, which suits me. Next weekend things will start for real, with it being Easter. But I still can't open the bridge more often than once every 10 minutes to allow for road traffic, looking forward to a little more action while still having time for a book or a newspaper. :)

I'm with @Zhnyaka on this one, are you teasing us by telling about a yummy low carb garlic and cheese flatbread but not telling us your secret recipe? :hilarious:
No teasing here. I use the recipes from Heavenly Fan on utube. She does vegan keto and any recipes I have tried have all turned out great. The garlic and cheese flatbread recipe was from here along with the indian curry. However, I follow a vegan diet so you could just add any cheese which is low carb. Hope this helps.

Aw that's a shame. Your written English is excellent like Antjes. The recipes and script are usually given on utube. X

My aunt came up with the idea of stuffed bell peppers, so I've had them with zaziki today and yesterday on the bridge. Worked very well reheated in the microwave!

Looks interesting. What is the white stuff on your plate.
It's zaziki, which tastes good with almost anything.
I make a very simple one: A big pot of 10% fat Greek yoghurt, scoop a bit out to make room for the cucumber. A whole grated cucumber (takes up much less room than you'd expect), a couple of garlic cloves, grated, pinch of salt, splash of olive oil.
