My Low Carb Ice Cream....Yummy:)

Diagnosed 13/4/16: T2, no meds, HbA1c 53, FBG 12.6, Trigs 3.6, HDL .75, LDL 4.0, BP 169/95, 13st 8lbs, waist 34" (2012 - 17st 7lbs, w 42").

I will take a look for this, don't get to waitrose too often but it would be lovely to have ice-cream now and then, the small tub appeals because I have had the large tub of diabetic ice cream previously and it was just too tempting to have it several times a week rather than a real treat................
 
I read your recipe....did you try making any without adding xyletol and if so id be interested to know how it tasted? Thanks
I've made a similar recipe without any sugar, though it was with double, not whipping cream and it was pretty good, can't remember the quantities, it was just what I had around, but you can't go wrong. I think I added some booze too, possibly gin.
 
Ive never tried without xylitol. I don't think it would be sweet enough for me. You can try erythritol which has zero effect on sugar levels
 
Today's latest ice cream recipe was a punnet of strawberries chopped small, half carton double cream 250ml full fat greek yog and sucralose to taste.

Took a couple of minutes to make and was really yummy.

The Aldi ice cream maker will never I fear be able to make consistent textured ice cream. The mix near the outside of the bowl was frozen and it was impossible to release the ice cream from the paddles and restart it, the stuff in the middle of the bowl was too slushy!

I have, however found how easy it is to make yummy ice cream and confident that I would use a more expensive machine enough to make it worthwhile. For me finding an acceptable (yummy) ice cream substitute is essential to enjoy a pretty strict LCHF lifestyle -not as important as finding a bread that doesn't spike me, but up there!
 
My new fridge freezer with more freezer space was delivered on Monday. I have now ordered an insulated bag online so I can buy some tubs of this ice cream and get it home before it melts (my nearest Waitrose is about 2 miles away).

I'm pretty sure there will be no stock on Oppo left after the weekend I've only tried the Salted Caramel - anyone tried the Mint Choc?
 
Oh, you lot have had me salivating! I had to go out and buy some as well. They'd run out of the salted caramel so I got the vanilla one. Hubs says he doesn't trust mint and choc together in an ice cream...??!! It was v hot outside so it softened up on the way home. Hurry up, freezer - do your thing!
 
So funny... So we've just been to Waitrose Cambridge, went to the freezer to find 6 Oppo tubs left...these were all quickly decanted into our bag and over to the checkout where we had a conversation with the person n front and then the checkout lady asking why so much ice cream. And how quickly this promotion had gone. I tried to explain that 200,000 potential forum members could have seen our thread and that's why Waitrose are being cleaned out before the promo ends. Even got a mint choc pot within the 6, which at 9.2g per 100ml is a little more than the others but one small scoop is still only 4.5g.

Managed to get one in Worthing today but have restrained so far from trying it.. will have a scoop tonight with a netflix movie as a special treat
 
Ha ha, loving this thread! I have 2 Waitrose stores near me so may have to do a tour round! I make my own ice cream with varying degrees of success. All usually good straight out of the maker but some freeze very solid. Have bought ingredients to make some this evening

I need to get turners fine foods to supply it. Waitrose dont deliver to Sunderland. WHAT!!!!!
I need to make a complaint.
No waitrose. Holland and barrett dont stock it in sunderland either.
I have to train it to newcastle but will be melted by time i get back. I need a refridgerated van (load).
I might get my older son into distributing low carb food. Like meals on wheels but low carb. mind u he's only 9. i guess it would have to be me -again.
 
Well I did a brisk 2 mile walk to my nearest Waitrose to be there at 8am opening time. There were about a dozen tubs of the vanilla, a couple of tubs of the salted caramel, and no mint choc left on the shelf. I sneakily hid the salted caramel tubs behind the vanilla ones so they wouldn't be grabbed while I looked for a couple of other non-melty items I needed.
So I got 2 tubs of salted caramel and 1 vanilla (not being greedy like @KevinPotts with his 6 Potts ). Also as it came to over £10 I got a free Weekend Guardian with my Waitrose card - bonus!
I got the Tube home to avoid melting, and got them in freezer within 10 minutes of buying.
I might take a walk to the next nearest Waitrose a bit later to see if they have the Mint Choc left. It's good to have some motivation to walk as I've got a bit bored with walking round the local park over the last couple of days.
Is it too early to eat ice cream?

Easy-peasey, Vicky - get your trundle suitcase, put a chiller bag inside with a few freezer blocks (frozen) and hop on that train into toon - that Oppo is within your grasp!
 
Went to the nearest Waitrose this morning and they don't stock it, bah!
Did get lots of saganaki cheese so that's dinner sorted for tonight and the rest in the freezer.
