You can just imagine the subtext - all diabetes crave sugar LOL
Interesting they failed on Dragons Den due to the apparent 'aftertaste' - Personally love the salted caramel, and a tub last around 2 weeks! Everything in moderation
I've made a similar recipe without any sugar, though it was with double, not whipping cream and it was pretty good, can't remember the quantities, it was just what I had around, but you can't go wrong. I think I added some booze too, possibly gin.I read your recipe....did you try making any without adding xyletol and if so id be interested to know how it tasted? Thanks

My new fridge freezer with more freezer space was delivered on Monday. I have now ordered an insulated bag online so I can buy some tubs of this ice cream and get it home before it melts (my nearest Waitrose is about 2 miles away).
Many congratulations @jaym great results, really pleased for you. Please do stick to a healthy diet, it's the best way to keep your diabetes in check.

Well I did a brisk 2 mile walk to my nearest Waitrose to be there at 8am opening time. There were about a dozen tubs of the vanilla, a couple of tubs of the salted caramel, and no mint choc left on the shelf. I sneakily hid the salted caramel tubs behind the vanilla ones so they wouldn't be grabbed while I looked for a couple of other non-melty items I needed.
So I got 2 tubs of salted caramel and 1 vanilla (not being greedy like @KevinPotts with his 6 Potts). Also as it came to over £10 I got a free Weekend Guardian with my Waitrose card - bonus!
I got the Tube home to avoid melting, and got them in freezer within 10 minutes of buying.
I might take a walk to the next nearest Waitrose a bit later to see if they have the Mint Choc left. It's good to have some motivation to walk as I've got a bit bored with walking round the local park over the last couple of days.
Is it too early to eat ice cream?

I need to make a complaint.
No waitrose. Holland and barrett dont stock it in sunderland either.
I have to train it to newcastle but will be melted by time i get back. I need a refridgerated van (load).
I might get my older son into distributing low carb food. Like meals on wheels but low carb. mind u he's only 9. i guess it would have to be me -again.
