Tried something new today because I like aubergine. Was going to make a parmigiana but didn't want to use tomatoes so I was just going to layer aubergines and cheese. While frying off the aubergine in bacon grease, garlic and ghee, after dosing in salt and leaving for 30 minutes, had a sudden thought why not use cream for the liquid element.
So layered the fried aubergine with sliced mozzarella and grated parmesan and poured on some double cream repeat until all aubergine used. Then deglazed the pan with double cream and topped with the last mozzarella and parmesan. Baked in the oven for 30 minutes at 200. I would post a picture but we ate it all. Was very nice.
