New dish made today- aubergine dauphinoise

Tried something new today because I like aubergine. Was going to make a parmigiana but didn't want to use tomatoes so I was just going to layer aubergines and cheese. While frying off the aubergine in bacon grease, garlic and ghee, after dosing in salt and leaving for 30 minutes, had a sudden thought why not use cream for the liquid element.
So layered the fried aubergine with sliced mozzarella and grated parmesan and poured on some double cream repeat until all aubergine used. Then deglazed the pan with double cream and topped with the last mozzarella and parmesan. Baked in the oven for 30 minutes at 200. I would post a picture but we ate it all. Was very nice.

I am still not really wanting to eat that much fat even though I do like double cream.. but it doesn´t appeal to me with all that grease nd fat and creams and oils... I do love aubergines very much... now I get about 60% of my foods from fats... but it is in a 1000 calories diet... about 60-70 grams of fat a day... how can one eat 200-300 grams of fat I don´t understand it...

how many grams do you eat that is fat every day bulkbiker ?

No idea.. I don't bother to count. I had just come off a 7 day no food fast tho...

well I do understand you then.. did your FAST go as you hoped... and your blood glucose how low did it get ?

Lowest blood was 3.8 mmol usually in low 4's
Lost about 13 pounds in weight (although I'm sure some of that will be regained).
Ketones got up to 5.9 mmol
All in all not a bad experiment and not as difficult an experience as I thought the last time I tried it.

It´s my birthday today and yesterday I was at an restaurant and when home again I checked my numbers ; I ate a lot also some of what is not low carb and had 2 glases of wine... so I was a bit nervous to see my numbers afterwards ... and it was only 4.8mmol I thought it would be like 7 or 8 mmols....
tonight I just had a pizza with wholemeal ham bacon peppers and a lot of cheese... and now my number is only 4.9 mmols...

it´s crazy .... it like I am not diabetic anymore.......... maybe all my hard excercise is actually changing my body back to non diabetic combined with the usually very low calories... ... I´ll check more times this night cause this is not what I thought would happen...I can´t actually really believe those numbers... but 2 days in a row... is not likely to be a coincidence is it...

@bulkbiker Now that's a dish and a half worth making. Thanks. Mrs DeeJay won't touch it so all the more for me while she has her Birds Eye crumbed fish ;)

That sounds pretty **** good.. I haven;t tried carbs but am still sure I would get much higher numbers than that.. I cans till get 6's and 7's without eating carbs although maybe less often. Cured.. I doubt it.. I just try to be controlled and probably will have to be this way forever.. however as I can eat loads of great things it doesn't really worry me too much.

Forgot to say I did put a load of garlic in the bacon fat and ghee before cooking the aubergine. the house smelt amazing..(assuming you like garlic smells of course)..and that all went in the final dish too. I'm just thinking some crumbled bacon might have really topped if off nicely.. one for next time.

I am not going to eat lots of carbs Again.. and I want to Loose 29 more kg´s and have a buffer zone so if I stop being diabetic , i won´t go back to being it Again, and I have decided to excercise so I´ll be more fit than ever and stay that fit as many years as that is possible... but yes I am very surpriced right now...

I love both bacon and garlic.. had bacon on my pizza today as well I also do like doubble cream...
and will eat it for special occations in huge amounts , but in daily life I keep eating mostly plant fats from nuts kokos and avocadoes and alike olives and other good plants..

I think there must be a reason why hardly any vegans get diabetes... there must be an explanation from their foods I think

Have you looked at the vegetarian and vegan forum here?.. there are some vegans who get Type 2.

yes , my daughter is a vegetarian and she does most of the daily cooking now... and for special occasions I usually get the rare beef or fish and that kind of foods as I do not eat them so often..

well I am still on 2 x 850mg metformin and as long as I need them I am definitly not cured...

Yummy!

I used to make moussaka with aubergines and minced lamb, baked with a sauce made with grated cheese, beaten egg and cream. Equally yummy...:p

Crumbed bacon ... you'll be moving to Islington soon! Sounds amazing - interesting I googled aubergine dauphinoise and you were the 5th entry. Patent it, can't wait to try it.
