New ingredients

I’ve just discovered dehydrated cream and macadamia flour. With eggs and vanilla they make a very low carb muffin

The recipe is kind of :

Around half a cup of dehydrated cream

Around half a cup of nut flour - I’ve used macadamia but almond works as does a mix

A few eggs. I used to give me muffins

caps of vanilla essence

Enough coconut milk to make the mix wet enough to hand whisk

Baked in air fryer at [emoji[emoji6]][emoji6] for fifteen mins

Do you have a recipe for these muffins, please?

I follow several American carnivore enthusiasts who use the cream. I’ve only just found an online supply

In short it’s like dried milk but it’s dried cream
 
I make a pudding which is fairly similar.

I usually use two eggs and double the ingredients, but:
For each egg mix 2Tbsp of almond flour and 1Tbsp of coconut flour, 1tsp of vanilla extract and 1 Tbsp of warm butter, when mixed add 1/4tsp of baking powder and sweeten it to what you like, stir vigorously.

Microwave for 60 seconds, then in 10 second bursts until the middle is firm.

As Christmas is coming, adding cinnamon, ginger, nutmeg, cloves, a Tbsp of mincemeat and another of mixed peel, maybe a couple of glace cherries in thin slices, slivered almonds or walnut pieces - even a few raisins soaked overnight in rum are all options, and then serving the result with cream can make not having a 'real' Christmas pudding not such a hardship.
I find that looking forward to pudding makes not hoovering up the last of the parsnips or other high carb options easier to manage.

Even for everyday, the zest and juice of a lemon gives extra zing to the basic mix.

I sometimes don’t always fancy the “ heaviness “ of a normal cooked breakfast.

Today I had a couple of these muffins knowing I’m getting a bunch of protein and fat without too much carbs. Washed down with black coffeee it made my morning mellow

Just fifteen mins in the air fryer and very little washing up too :-)
 
As a dried milk user in my tea for the last fifty years I cannot believe I’d not heard of the same in cream. Every day is a school day. I like the air frier cooking of these as I don’t own a microwave.
