Yesterday's Observer had a recipe for Baked Eggs with Taleggio and Greens. It has not hit the website yet or I would have posted the link.

125gr mixed green (kale etc) in boiling water for 1 minute, then drained and refreshed with cold water in a colander. Squeeze the moisture out.
Beat 6 eggs, add shredded greens and season. Warm 2 tbs olive oil in a pan and add the egg mixture.
Cook for 2 minutes then place slices of taleggio on the surface.
Scatter with 3 tbs chopped pumkin seeds.
Bake for 12 minutes.

Sounds yummy, doesn't it? I will attempt this in the next few days and will let you know. I will likely substitute the olive oil with coconut oil and the taleggio with feta. This serves 2 people and I reckon is pretty much low carb.
