No, no, not the meringue

oooooooooooh ten minutes to go! Need to know how this turns out! xxx
 
:oops: :oops: :oops: :oops: :oops: Sorry guys, well the Fruisana doesn't leave a bitter after taste which is the good news, the bad news is Hubby thought i'd left the oven on, and turned it off half way through which i hadn't realised as the lights gone in my oven. Result on the outside rubbery meringues,on the inside almost perfection,not quite edible but no bitter taste. As i've used the last of the fruisana, perhaps someone else would like to use it in their recipe. Have a busy week ahead so the only time i'm gonna be in the kitchen is to load the dishwasher!! :oops:

OK I will take the torch (metaphorically speaking) and see if I can get my blender to grind down the granule size of my Xylitol and try with that :)

This totally off-topic but...did you know that if you balance a plate of frozen mini éclairs on top of a hot cup of tea they defrost much more quickly!!Basic physics I guess but so good!!! :twisted: :twisted:
 
If you eat frozen ones they last longer in the mouth ;)

Actually I'm joking ... frozen food seems to have less flavour so I always wait for defrost ... not that I've found any of these eclairs with under 6 carbs that everyone talks about - alll the ones I've seen have whopping carbs!

Meringue Recipe anyone??
2egg whites
2 - 4 rounded Tblespoons Splenda
2 teaspoons Fructose (optional, for taste and texture)
drop of lemon juice
Wipe bowl with lemon juice
separate eggs( whites into "lemon" bowl Yolks into other bowl and cover in milk or cream. (keep in fridge for scrambled egg for tomorrow's breakfast
Whip egg whites stiff. So you can invert bowl without them dropping out.
Add 2 spoonsSplenda 1 spoonful at a time. whisking all the while
fold in remaining Splenda ( be gentle witha METAL spoon! don't knock the air out of the mix
If using it fold in Fructose.
Spoon or pipe onto non stick surface, baking sheet.
put in oven at low setting for 1 hour. turn off oven and allow to cool with meringues in.
When cool, store in airtight box.( if they stay around to be stored :lol:

Jem,have a look in the freezer dept.for 'party' ranges.That is were you find the 2 carb mini eclairs.Co-op has them so do Somerfields and I guess the other big names will probably have them as well.
 
You could also crush the merginue, add lots of berries and cream and enjoy that.

It is such a shame that the 1.9 merginues don't exist.

Hmmm ... no Somerfields anymore and only small "local" size Co-ops - but will keep an eye out --- the question remains, if I relaly like them, will I manage to NOT eat the whole PARTY box? hahaha ... oh just had a thought (happens sometimes lol) ... Farmfoods do a 99p box of profiteroles, if I just discarded the chocolate sauce, I am pretty sure that one of those would be pretty love ... hmmmm?! Must go shopping!

Re the xylitol meringues - thus far it's not looking too good ... but we'll see if they set to anything approaching edible ...

current taste = very sweet, normal sugary taste
current texture = flabby blargh ... I even left the oven going for 3 hours and I don't have nay more patience!

Must find the nearest Farmfood sotre. The local one closed down a couple of months ago. :cry:
 
Let's say that the xylitol meringues were an

Heroic Failure

and try not to do it again!

Pros:

Did not raise blood sugar
Did not make teeth furry

Cons:

Texture not meringuey, might have done for baked alaska?
Vaguely not nice tingly sensation in mouth (xylitol cools the mouth)
More than two will mean moving more than a few hundred feet from a toilet not clever :0

URGH!

And onwards goes the search!!!

Total frustration isn't it, bet a lot of love, sweat and tears went into your creation, pity they weren't edible, i had the same problems and simular results. Oh well back to the drawing board!
Anywone looked at the carb count on party sized meringues? would be interested to know, if anyones at the supermarket before me ( not going to Sat) could they let me know, cheers

Sainsburys party meringues were tiny and about 11 carbs - but they were smothered in chcocolate - still no joy on the eclair front :( /// will probably buy those profiteroles where the sauce is separate (cheap from Farm Foods) and just ditch the sauce :)

And yep! blood sweat tears and frustration - sounds about right for my kitchen!

Watch out for the fructose!
It won't put your BG up, but eating it often isn't good for the triglycerides or the liver.
