I just tried to make pancakes which are very low carb.
I used a goblet mixer/blender.
A small amount of water, the batter should be quite thick, a blob of mozzarella cheese, 125gm, torn into about 6 pieces, 3 eggs, and I tried psyllium husk. About a teaspoonful should be right - I tried a tablespoon and it was too much.
You might try coconut or almond flour if you have no psyllium - or maybe xanthan gum. It needs a bit of help holding itself together, but the tablespoon of psyllium flour was too much and they would have been slimy if not cooked enough.
Make the batter with minimum water and don't leave it to stand.
Melt butter with olive oil in a pan and cook the pancakes fairly slowly, shaking them at first to thin them out, then let them cook gently, lifting up the edges to allow the fat to get underneath, free them off and flip them with a fish slice.
As they take a bit longer than flour pancakes to cook stack them in a warm oven until you have enough done.
I had intended to add in some thick cream but totally forgot and left it out. You might be less forgetful.
They are very low carb so you can go to town with the additions.
I had lemon juice and a granulated sweetener so used them.
They tasted great.
