hi there i have been told not to eat parsnips as they are really high in sugar, does anyone still eat these ive been so good not having bread,rice,potatoes ect but i do love parsnips and miss them do you think it would be ok to eat them say once a week , and also what about butternut squash.

According to the Collins Gem Carb Counter, parsnips are 10.3g carb per 80g, or very roughly half (or possibly even less) the carb content of a potato. Unless I'm being thick the book doesn't seem to tell you about butternut squash. However, I can tell you I eat both often without any problems in my blood sugar level. Carrots and swede also.
 
I too enjoy parsnips and sometimes really enjoy them sliced exceedingly thin and fried to produce thoroughly enjoyable crips to go with a bowl of home made vegatable soup instead of toasted bread.

By testing your blood after meals, you will soon find what foods affect your system the most .. we are all different.
 
Butternut Squash (From Widdowsons)
100gm raw squash = 8.3g carb( fibre = 1.6 but this is in addition and shouldn't be subtracted)
100gm weighed baked =7.4g carb
 
I also got into making "swede chips". You cut up the swede like cutting up a potato for "real" chips, so they look much the same but are actually swede. If you put them in a dish generously sprinkled with olive oil in a hot oven for about 40 mins (very roughly) they come out delicious. I put lots of rock salt over them, sometimes grated cheese also. Occasionally also a hot chili with mince or kidney beans. Mmmm. :D
