Anyone got any suggestions or recipies for making a "better" pastry?

I'm a lifelong fan of meat pies and sausage rolls, and would love to be able to still have an occasional treat!

Can pastry be made with wholemeal flour ???

Well of course you can make pastry with wholemeal flour, but would it not still be too carby?

Here is a really good recipe you might like to try, I often make steak pies, but tend to do a pastry lid only.

Ingredients:
100 g softened butter
50 g Gluten flour
50 g Protein powder, unflavoured
50 g almond flour
1 egg
2 egg yolks
1 tsp salt
3 tsp baking powder

Cream butter and eggs together, add rest of ingredients, knead to a firm dough. Leave to cool in fridge for 30 minutes, then roll out as you would ordinary pastry.
Bake at 150C (thats for fan assisted ovens) for about 20 - 30 minutes, depends on how thick its rolled out.
Total carbs 9g for the pastry
Tip: put a stocking over the rolling pin, the pastry will never stick - I used to do that with ordinary pastry as well
Dont worry about the almond flour, your pie wont be tasting of marzipan, almond flour is neutral in taste.

I seem to be OK with a moderate level of carbs, I'm trying to find ideas that the whole family can eat without me having to cook two separate meals every night!

Thanks so much for that! I've been trying to make pastry in all sorts of ways - my Carbolose pastry was OK, but a it tough. My almond pastry fell into pieces and really didn't work. I'll give this one a try! By 'gluten flour', do you mean Vital Wheat Gluten, or is that something different?

smidge, yes you can use Vital Gluten flour - I personally dont like the Carbalose stuff, its full of chemicals I dont like, but others praise it, so its a case of each to their own.
Let me know how you fare with this pastry recipe, I have had no problems with it.
