My local grocery store was selling turnip which had been pre-sliced then squared off to remove the skin. It looked like slices of polenta. I bought some sauteed it in butter and hey presto it tastes a bit like polenta too. It has a lovely taste and a firm texture that feels like a satisfying food.
Definitely one to repeat !

I was hoping you had found the Northern Lombardy secret https://en.wikipedia.org/wiki/Buckwheat
In frace is used to make booze, like whiskey http://www.distillerie.bzh/wp-content/uploads/2015/04/fiche_EdduSilverBro_EN.pdf
In Northern Italy is used to make Polenta Taragna.

This is a recipe in English. The important thing is to use butter not olive oil and absolutely not margarine. You could skip on corn, eventually and you have some wiggle room for cheese. If you have Gorgonzola or blue cheese it works, if you like eborinated cheeses.

It's not low-carb, but has a low GI and due the resistant starches
