I notice that the ideal time to test seems to be 90mins to 2 hours after a meal. If it's longer than 2 hours is it still worth doing or will the ideal moment be gone?

A few times I've forgotten the time and it's been more like 3 or even 4 hours.

As you are trying to compare the effect of differnt meals, a test after 3 or 4 hours will tell you nothing unless the result is high.

The main reason for testing is to see the impact of what you eat on your blood sugar. So, if you test just before eating and again about 2 hours later you'll be able to judge how your meal affected BS and then over time will learn what foods you should probably avoid and what foods have little impact on BS. As @ringi has said, if you wait too long after a meal the result isn't really all that useful.
