Potatoes

Ok help I am doing quite well with the low carbing but cannot cut potatoes out completely. So which way is best I don't like chips so here goes steamed mashed jacket or roast :?: :?: :?:
 
The type of potato will also make a difference. Small immature new potatoes have a bit less starch so less carbohydrates than larger mature potatoes.

As for cooking, boiling removes some of the starch, after that mash, or roast.
 
hi have you tried cauliflower mash or maybee some roasted butternut squash chips? i find them a terrific substitute to spuds :)
 
Roast in goose fat. But not too many. Maybe a couple of new potatoes. Personally I've cut them completely, in 18mths I've only had them once. And spuds were my comfort food of choice, with lashings of butter and salt.
 
What if i made parsnip crisps, guessing rapeseed oil would be the low carbers choice, if at all applicable?

I'm okay with new potatoes but have to limited them to say 100g at a time. Find that mash and jackets dont work for me but everyone is different. You need to test and find your own levels. I too found that giving up potatoes was the hardest, couldnt care less about pasta or rice!
 
If you still want potatoes try to leave the skins on (after washing) this slows down the breakdown/glucose rates. By the same token Mashed breakdown much quicker.
 
Anyone tried the Celeriac Chips yet? I was thinking of trying them next. Apparently Celeriac is a great substitute for a potato. I'd love to know if anyone tried it out and their opinion on it.

I make celeriac dauphinoise with cream, they taste good.

there's a variety of potatoes called "Vivaldi", which I think is only sold by seed merchants [to grow your own] and Sainsbury's; which is claimed to bee lower in carbs than other varieties. They are nice tasting potatoes. Otherwise, baby pots are low in carb and don't forget portion size!

But to be honest I have never understood why people would want to substitute one food for another and say it "tastes just the same"....It doesnt if you dont want potatoes dont eat them but dont kid yourself that celeriac tastes like them because it doesnt, neither does cauliflower look or taste like rice, neither do vegetarian sausages taste like sausages if you want to a eat vegetarian why do you want food that looks like meat? And if you dont want to eat potatoes or rice why pretend other foods are the items you dont wont to eat?

I find baked potatoes too big, mashed potatoes too processed so they shoot my bg levels up but I do eat a few baby pots or a few chips or a few roast pots all in small portions, generally 2 or 3 conker/small egg sized potatoes. I do not want to eat celeriac and pretend it is mash, it isnt, Id rather go without thanks :D

Thanks for the head's up. I'm goin to try them, just because I need to satisfy my own curiosity, but I won't buy them in bulk on the off chance they taste bad lol.

I tried Mooli, and cooked it does taste like potato, but I don't like the texture of it.

I disagree with that because people fail on diets by cutting out food they enjoy. Just because a potato is a starch monster doesn't mean there isn't an alternative to it. I know there's Dixie's mashed potato mix that makes carb free mashed potatoes, so if that can exist then there must be something that can replace the potato.

I find the more I experiment, the more food I can eat. Sure, some experiments are absolutely disgusting and don't work, but others work out wonderfully. Why can't I eat a faux Yorkshire Pudding with lots of veg and gravy and call it Sunday dinner? I think the more recipies appearing online are a total godsend. I hope people keep posting them.

Any recipe, carb or not, is a clever combination of foods that taste good. It's a case of finding the right combination. At least in my experience.
 
Baked sweet potatoe with a dollop of sour cream and chives - delish! Could also make a nice mash with sweet potatoe or indeed carrot/suede.

Tip - don't keep potatoes in fridge as it brings out more starch making them sweeter
 
If you can't do without them just cut down to one or two small ones, and don't beat yourself up about it. :D
 
I agree, just be sensible with portions, and only have them now and again.

Of course it's important to try and eat foods which we know are better for us as diabetics, but personally I find that if I cut out all potatoes, rice etc, I just crave for it even more, so having a teeny amount doesn't spike my blood sugar, and I feel much happier that I can still enjoy the majority of foods out there.
 
I can live without potatoes but my downfall is pasta and rice...thanks to my Mediterranean upbringing. I find i can have a couple of tbps of brown rice ok. As for pasta i buy low carb one. Its expensive but at least i am not eating just meat and veg everyday.... :)

I like celeriac!!!!

Im planning to have some tonight mashed with butter then topped with sauages onion and gravy.....yummy!

I also like it roasted. I did try roasted sweet potato, which is lovely but my BG shot up, so no more of that. I also really like roasted butternut squash. I very very rarely have potatoes, I simply don't buy them. So when I occassionally go for a cravery I MIGHT have 1 or 2 roasted, but not always. I too used to have them pretty much with every dinner in some shape or form, well when I was eating pasta! :lol: Haven't touched pasta or rice since I started low carbing in July last year. Don't really miss them either.
