Protein Bars

I eat Grenade bars. They are sweetened with polyols (sugar alcohols, neither sugar or alcohol though!). They range from around two to five grams of net carbs per bar. You need to subtract the number of polyols from carbs to get this number. I’m lucky that polyols don’t affect my blood sugar levels, some people find they do, so you need to check your levels before and after to see if you can tolerate them.
 
I like PhD Smart protein bars, which I buy from Sainsbury's. They are a go-to when I am on the move and low carb food is not available. None of the varieties I've eaten has raised my BG, although some have a bit more sugar than others.

I used to eat them regularly til they stopped including polyols in the nutrition list. I do eat the occasional one hoping the nutritional breakdown hasn’t changed since they did.
 
Have you thought of making your own @Geeps ? I make jams so I often have the left over skins and seeds from extracting the juice. I'm going to be drying these and adding nuts and seeds. I have attached a recipe.

The only downside would be the carbs from the oats and the sugars from the dates. I'm not on a very low carb diet so I'm not too concerned , but I guess you could vary the recipe.The dates likely bind the vars together, but just an idea .
