I improved my lipid profile by reducing carbs and increasing healthy fat (which means avoiding processed vegetable oils - olive oil is ok as are dairy and animal fats). A high carb/low fat diet will improve your cholesterol numbers somewhat, but that is a bad option for type 2 diabetics as it will raise your blood sugar and triglycerides. A low carb high fat diet will actually improve your lipids even better than a high carb low fat diet, especially triglycerides.
