Realised there’s nothing I enjoy eating..

As you have type two diabetes I would not be at all surprised if your appetite regulation hormones are 'up the wonk'. And, of course, people are just - different in this regard (you mentioned not liking the senses being engaged around taste?). But, an animal with no appetite and not eating will eventually be a dead animal - so it is absolutely a sign of ill-health in its most absolute sense imho.

I guess you have to force yourself to eat for nutrition/life's sake? You might more enjoy breaking food down to nutritional components and choosing food on that basis? In order to enjoy some aspect of eating. It's such a big deal and take's up so much time! Find something about food's life and energy giving qualities that you can get interest and enjoyment from? By tracking the micro and macro nutrients and all that in what you serve yourself/and cook? Perhaps?
