Red cabbage

I used to do red cabbage with both apple and some honey. I cut out the honey and can't honestly tell the difference. Like other people, I find that the amount of apple, spread over the number of portions from anything but a small red cabbage makes the carbs no higher in the end than several other vegetables - and good for improving the HDL levels (all the purple foods are).

I mostly use celeriac in casserole-type dishes. I make big one, so use the whole celeriac in one go, with a mixture of other vegetables. If it's not your favourite flavour, you could minimise it by what other vegetables you mix it with. Experiment?
